There may be many reasons why this is not done more often, but I can think of two right off the top.
First, the playing surfaces may be unsuitable for soccer (e.g. Skydome).
Second, soccer teams may not be able to afford to rent large stadiums when they only need to accommodate 5,000 fans at a time.
