I think there are registry edits you can do to achieve the classic desktop style, so that would indicate that it's still built in to the operating system.
Windows can't go full Metro UI, no way in hell. I've seen first hand the problems moving from XP to 7 at a corporate level, and while 7 to 8 should be easier technically, the user experience would be hell on earth. It would cripple the help desk for a start.
They'll have to have the classic style, at the very least as a feature in the professional edition of the OS.
